PUMPKIN FRITTERS

That something so simple can be so delicious. Just cooked pumpkin mixed with a few things, fried and sprinkled with cinnamon sugar. Eaten as an accompaniment to some other dish or on its own as a desert with vanilla ice cream, for me it will always be a favourite.

2cups/500ml pumpkin, cooked and mashed
1/2cup/125ml flour
1t/5ml baking powder
Pinch of salt
2 eggs
Oil/butter for frying
1/4cup/60ml sugar
1t/5ml cinnamon

Mix the pumpkin, flour, baking powder and salt together. Beat the eggs and mix into pumpkin to form a batter of dropping consistency. Add some milk if the mixture is to stiff
Heat the oil and fry spoonfuls till cooked through and golden brown.
Mix the sugar and cinnamon and sprinkle over fritters.
Serve hot.
