…..yummy, yummy, yummy

These delicious all in one breakfast has quickly become one of this season’s favourites. Each and every ingredient listed is always available in our house….seeing breakfast is our most important meals of the day!!! The optional cinnamon….Stanley insisted, Lainy is not convinced. They need some preparation time, but is worth every minute. Please make sure not to over mix the dough, muffins don’t benefit from it, they’ll bake uneven!


175g Dried fruit, chopped
60ml Fruit juice….orange/apple/mango
3 Eggs
150ml Plain Yoghurt
100ml Grape seed oil
125ml Soft brown sugar
600ml Flour
15ml Baking powder
5ml Bicarbonate of soda
10ml Cinnamon (optional)
60ml Pecan nuts, chopped
60ml Seeds…bigger seeds should be chopped

Marmalade…a teaspoon per muffin

50g Soft brown sugar
30ml Grape seed oil
60ml Nuts, chopped
60ml Seeds, chopped

Pre heat the oven to 200°C and prepare muffin trays.
Soak the dried fruit in the juice.
Place the eggs in a mixing bowl and whisk.
Add the yoghurt, oil and sugar and mix till well blended.
Stir in the apricots and juice.
Sift together the flour, baking powder and cinnamon.
Add the nutty mixture and the flour.
Mix carefully so that it stays lumpy and is not over mixed.
While it rests make the topping….
Mix the nuts, oil and sugar to form crumbs.
Spoon into muffin pans till half full.
Make a hole in the centre and fill with marmalade.
Sprinkle topping over each.
Bake for 20min or till done.
